Thomas Dorfer loves the classics. Names such as Albufeira, Sauce Choron, Royale or Beurre Blanc are subtly referenced in his dishes – and sometimes even allowed to take centre stage. Every plate is an invitation to engage with the aromas and textures of the ingredients, which together create the overall flavour. It is not a cuisine of provocation; there is nothing divisive about it, but much that brings people together. Wines with low alcohol are jokingly referred to here as “rascal wines” – charming bottles for those who enjoy something light and uncomplicated. The wine list at Landhaus Bacher follows a clear credo: the best of everything, but not the most expensive. Rarities from Bordeaux, the Rhône and Burgundy stand alongside the elite and the innovative young winemakers of the Wachau. Lovers of mature vintages will be delighted by the exceptional vintage depth – unusual in Austria – which for many guests is reason enough to book a room along with their table reservation.
