Tasteful and unifying.
Thomas Dorfer loves the classics. Names such as Albufeira, Sauce Choron, Royale or Beurre Blanc are subtly referenced in his dishes – and sometimes even allowed to take centre stage. Every plate is an invitation to engage with the aromas and textures of the ingredients, which together create the overall flavour. It is not a cuisine of provocation; there is nothing divisive about it, but much that brings people together. And if a guest at Landhaus Bacher is ever shocked, it is only by how shockingly good everything tastes.
From the Cellar: The Wine.
Wines with low alcohol are jokingly referred to here as “rascal wines” – charming bottles for those who enjoy something light and uncomplicated. The wine list at Landhaus Bacher follows a clear credo: the best of everything, but not the most expensive. Rarities from Bordeaux, the Rhône and Burgundy stand alongside the elite and the innovative young winemakers of the Wachau. Lovers of mature vintages will be delighted by the exceptional vintage depth – unusual in Austria – which for many guests is reason enough to book a room along with their table reservation.
Today, the impressive wine cellar is overseen by Dipl. Sommelière Susanne Dorfer-Bacher. She knows the Wachau as well as Burgundy and Bordeaux in remarkable detail and recommends the perfectly matured vintage with great precision – from established winemaking icons to the international stars of tomorrow. She also arranges major tastings with passion and expertise. Her enthusiasm extends to the great wines of the Wachau as much as to those from Champagne and the finest vineyards of Burgundy.
